CIEH Level 2 Award in Healthier Food and Special Diets

The course aims to provide candidates with a good basic understanding of nutrition to enable them to provide food that meets the requirements of a balanced diet. It is suitable for anyone in catering, preparing and serving food, particularly those involved in the selection of menus, recipes and ingredients. This qualification is relevant to all catering establishments, but particularly important to sectors where there is a 'captive audience' (e.g. health care and education).
Those undertaking an NVQ in care, or wishing to pursue a career in working with children or the elderly will find the course invaluable. It is also a very good general interest course.
This one day training covers the following:
• Introduction to nutrition terminology
• Understanding of the roles of protein, carbohydrates and fats in the body and the role of other constituents i.e. water, fibre and food additives.
• The balance of good health and the eatwell plate
• Relationship between diet and health
• Nutritional Requirements of different groups such as pregnant women, older people, vegetarians and ethnic and religious groups
• Catering to different groups for feeding people in hospitals, residential homes, nurseries etc
• Food processing
• Food Labelling
